Cauli-roni & Cheese
This is a delicious side dish that is super easy to make. My go to when I'm craving comfort food.
16 oz Frozen Cauliflower
4 oz Cream Cheese softened
4 oz Cheddar Cheese shredded
2 TBLS Heavy Cream
2 oz Cheddar Cheese shredded, reserved
Salt and Pepper to taste
Cook the cauliflower until tender; drain well.
Whisk the cream and cream cheese until smooth, then stir in 4 ounces cheddar cheese.
Microwave on MEDIUM about 2-3 minutes or until the cheese is melted. Stir well until creamy and smooth, microwave a little longer if needed.
Add the cauliflower and gently mix into the cheese sauce to coat it well.
Top with the reserve 2 ounces cheese and bake at 350º for 35 minutes, until brown on top and bubbling.
