This is a delicious side dish that is super easy to make. My go to when I'm craving comfort food.

Ingredients
- 16 oz Frozen Cauliflower
- 4 oz Cream Cheese softened
- 4 oz Cheddar Cheese shredded
- 2 TBLS Heavy Cream
- 2 oz Cheddar Cheese shredded, reserved
- Salt and Pepper to taste
Instructions
- Cook the cauliflower until tender; drain well.
- Whisk the cream and cream cheese until smooth, then stir in 4 ounces cheddar cheese.
- Microwave on MEDIUM about 2-3 minutes or until the cheese is melted. Stir well until creamy and smooth, microwave a little longer if needed.
- Add the cauliflower and gently mix into the cheese sauce to coat it well.
- Top with the reserve 2 ounces cheese and bake at 350º for 35 minutes, until brown on top and bubbling.
